Vegan restaurant Blinders Burgers & Brunch is set to open in Las Vegas this month, according to Vegans, Baby, a guide to all things vegan in Sin City.
The new restaurant will be taking over space currently occupied by Vege-Way North, a vegetarian fast food restaurant. The menu will feature multiple choices for plant-based burgers and fries made with non-GMO ingredients, using locally-sourced food whenever possible.
The restaurant’s chefs have partnered with local plant-based meat company, No Butcher, to create specialty menu items such as a pulled “pork” sandwich. Additionally, the menu will feature vegan cheese from local artisanal vegan cheese brand, Virgin Cheese, the Impossible Burger, and plant-based meats from the Minneapolis-based Herbivorous Butcher. On the weekend, the restaurant will offer brunch with plans to have draft beer and kombucha on tap.
Blinders Burgers & Brunch owner Shantell Connor, who has a background in medicine, spoke about why she chose to open a vegan restaurant: “I see plant food as medicine,” she explained. “I’ve seen labs drops significantly and reverse issues for those suffering from high cholesterol, diabetes, and some cancers.”
“It’s the place vegans can bring their carnivore friends to eat,” said Connor. “Basically, it’s the place to go for everyone to enjoy amazing plant-based foods that taste amazing. I’d love people to leave saying ‘I can’t believe that was vegan … and break down that barrier. That’s why we chose the name ‘Blinders.”
The news of Las Vegas’s newest plant-based restaurant follows closely behind the opening of The Modern Vegan, a restaurant with over 100 plant-based dishes on the menu and the announcement of the addition of vegan menus to two local mainstays, Border Grill at Mandalay Bay and CRAFTKitchen.
It seems as if the growing demand for vegan food is leading to an influx in options for vegan diners. Earlier this month, celebrity chef Matthew Kenney announced his plan to open a vegan deli and convenience food store in Venice Beach, closely following the opening of his new cafe, PLANTMADE. Restauranteur Ravi DeRossi, owner of 15 cocktail bars and restaurants in New York City, plans to open two 24-hour vegan diners this year.
