Like Mince Vegan Lasagna

Like Mince sauce

  • 2 packages LikeMeat Like Mince
  • 2 tablespoons olive oil
  • 2 onions, finely chopped
  • 2 cloves of garlic, minced
  • 3 tablespoons tomato paste
  • 3 carrots, finely chopped
  • 2 cups 200 grams mixed mushrooms, finely chopped
  • 2 14.5-ounce cans diced tomatoes
  • 1 tablespoon dried oregano
  • Salt, to taste
  • Fresh ground black pepper, to taste 

Like cheese sauce

  • 1 cup 250 milliliters plant-based heavy cream
  • 1 tablespoon cornstarch
  • 1/4 teaspoon nutmeg, grated
  • 2 tablespoons nutritional yeast
  • 1 teaspoon mild mustard
  • Salt, to taste
  • Fresh ground black pepper, to taste 

To assemble

  • 12 vegan lasagna noodles, cooked
  • 3 1/2 cups 100 grams plant-based cheese

      In a large pot over medium heat, add oil, onion, and garlic. Cook until softened.

      Add Like Mince and tomato paste. Cook for 2 minutes, stirring constantly.

      Add carrots and mushrooms. Continue cooking for 2 minutes, stirring occasionally.

      Add 1 1/4 cup (about 300 milliliters) water, diced tomatoes, oregano, and salt and black pepper to taste. Let simmer, stirring occasionally, until reduced and thickened, about 30 minutes

      In a medium pot over medium heat, add 1 cup (250 milliliters) water and heavy cream. Bring to a simmer.

      In a small bowl, whisk cornstarch with 3 tablespoons (50 milliliters) water. Add cornstarch mixture into the pot and stir until the sauce thickens, stirring constantly.

      Stir in nutmeg, nutritional yeast, and mustard.

      Season with salt and black pepper to taste.

      Preheat the oven to 180°C/350°F.

      In a 9-by-13-inch baking dish, spread a layer of Like Mince sauce followed by a layer of lasagna noodles and cheese sauce. Repeat layers and finish with a layer of cheese sauce with cheese on top.

      Bake for 30 minutes until a knife poked in the middle comes out smoothly.
