Sweet tooths will be happy to know that you can find giant vegan shortbread biscuits at Co-Op.

Made by UK-based bakery Emma’s Country Cakes, the vegan version of brand’s signature shortbread Vanilla Whirls have a soft, melt-in-your-mouth texture perfect for pairing with tea. It’s not listed on the website, but Instagrammer Vegan Food UK spotted the dairy-free cookies last week.

The bakery, founded in 1992 by Emma Davies, makes all of its bakes by hand using local ingredients and no preservatives or artificial colors and flavors. The company also takes steps to be more environmentally-friendly; packaging is made using 70 percent recycled materials and uses only RSPO (Roundtable on Sustainable Palm Oil) certified palm oil.

Vegan Cookies at Co-Op

There are plenty more vegan biscuits available at Co-Op, like dairy-free bourbon creams, chocolate chip cookies, gingerbread bunny biscuits, jammy wheels, and tea biscuits, according to UK-based blogger Vegan Womble. The custard donuts, jam donuts, and apple puff pastry pie from the bakery section are also free from animal ingredients, according to the website.

Co-Op’s Vegan Food Options

Aiming to meet the rising demand for plant-based food in the UK, the nation’s sixth largest supermarket chain had launched more vegan options over the past couple of years.

It’s stocked with vegan staples like dairy-free milk, bread, beans and grains, sauces, snacks (like bacon and tomato crisps), and sweet treats like vegan “Nutella” and chocolate ganache pots. The frozen section has convenient options like sweet potato rostis, spring rolls, onion rings, garlic baguettes, and veggie burgers.

Co-Op offers vegan grab-and-go options like couscous, falafel platter, and a new range announced earlier this year. It features BBQ pulled jackfruit bowls and sandwiches, vegetable stir-fry, meatless lentil cottage pie, Thai green curry, and dairy-free mushroom stroganoff.

Last March, Co-Op launched its own-brand realistic vegan burgers. Called the Incredible Burger, the meat-free patties are make from a blend of soy protein, chickpea flour, and beet juice, which makes it “bleed” like Beyond Meat’s Beyond Burger.

Emma’s Country Cakes bakes are available at Co-Op, Sainsbury’s, Asda, Morrisons, and independent supermarkets across the UK.
