How to Cook Vegan Like Kim Kardashian

Kim Kardashian frequently shares some of her favorite vegan recipes created by her chef, Marina Cunningham. The reality star is partial to plant-based tacos, granola and more. Here are some of her top plant-based recipes.

Kim Kardashian made headlines when she declared she was going vegan in April 2019. “I am eating all plant-based when I am home,” she noted at the time. Although the Keeping Up With the Kardashians alum isn’t strictly vegan, she says that she sticks to a plant-based diet most of the time thanks, in part, to her chef Marina Cunningham.

The culinary pro frequently shares photos of the vegan meals and snacks she prepares for Kardashian on social media, and has also shared many go-to recipes that Kim loves on Kourtney Kardashian’s lifestyle website, Poosh.

One of Kim’s favorite plant-based meals is plant-based tacos made with Beyond Meat. She loves the Mexican staple so much that she even hosted a recipe tutorial in May 2021 as part of the Poosh Your Wellness virtual festival, and showed her millions of fans just how she likes the vegan meal. “They’re so good,” she said. “I like [vegan] meat better than regular meat.”

Kim has also given her fans a peek into the massive walk-in refrigerator inside her California home, which is packed with fresh organic produce and pre-made plant-based meals.

Kim Kardashian Embraces a Vegan Diet for Her Health

The KKW Beauty founder has been vocal about why she made the switch to a plant-based diet. In a September 2019 Poosh post, Kim explained that she pivoted to a meat-free eating regimen in an effort to get her psoriasis under control

“I changed my diet to plant-based (which I still follow),” she explained. “I live a healthy life and try to eat as plant based as possible and drink sea moss smoothies.”

However, that’s not the only reason Kim has chosen to ditch animal products. “I think I watched a documentary on [veganism],” she said in May 2021. “I just met chefs that loved to cook plant-based and were teaching me so much about sea moss and all of this amazing food that had these really good health benefits … I luckily have the help of amazing chefs that have figured out how to find the things that I really love and make a plant-based version of that.” 

The Selfish author, who said she has “converted three family members” to a vegan diet, also encourages her kids to ditch meat. “I try to get [my kids] to eat as much plant-based [food] as possible,” she explained. “They really don’t know the difference.”

How to Cook Vegan Like Kim Kardashian

Kim often shares a peek at her vegan meals with her millions of followers. She’s particularly fond of dishes that look and taste good, like chocolate-covered strawberries and dragonfruit smoothie bowls. She also loves to post dishes that span many different cuisines. Here are some of Kim Kardashian’s favorite vegan recipes.

Plant-Based Tacos

While Kardashian has a wide array of vegan meals she loves, her favorite (and the one she most frequently shares on her Instagram Stories) is plant-based tacos made with ground Beyond Meat and spices such as cumin, garlic powder, and chili powder.

Cunningham, told Poosh that she typically makes the vegan, gluten-free, and dairy-free tacos for her famous client about once a week. The chef also noted that the reality TV personality prefers her meat-free tacos without cilantro and lime. Instead, the additional filling is made with sliced avocado, dairy-free cheddar cheese shreds and sour cream, and diced tomatoes and onions.

This similar version uses cactus paddles for the taco “meat,” but includes many spices and ingredients typically used when preparing tacos, such as cumin, paprika, and chopped white onion.

Gluten-Free and Vegan Vanilla Pecan Granola

When it comes to breakfast, Kardashian eats this sweet treat in a bowl with almond milk at least once a week. It’s also topped with diced fruit such as pineapple, strawberries, nectarines, and bananas.

The granola itself is made with gluten-free oats, coconut oil, maple syrup, vanilla, chopped pecans, and more.

According to Poosh and Cunningham, the healthy granola can also be used as a topping for smoothie bowls, oatmeal, or chia pudding. Additionally, it works in yogurt parfaits or simply eaten by the handful!

For a slightly heartier snack, try these caramelized cashew granola bars made with rolled oats, freekeh flour, dried cranberries, and more.

Vegan Taco Salad Bowl

This variation on Kardashian’s beloved plant-based tacos includes the same vegan meat, but also boasts nutritious lettuce, Persian cucumbers, cherry tomatoes, black beans, ripe plantains, bulgur, and more. It’s topped with corn tortilla “crunchies” and a homemade Southwest BBQ dressing.

Yeah, it’s basically heaven in a bowl.

Vegan Chocolate-Covered Strawberries

When the KKW Beauty founder’s sweet tooth needs to be satiated, one of her favorite things to snack on is strawberries dipped in vegan chocolate. Though any vegan chocolate will do, Cunningham opts to use one variety in particular. “I use Love chocolate from Butter Love & Hardwork,” she shared. “It’s the best!”

Cunningham then sprinkles some Maldon salt onto each strawberry before the chocolate sets and serves them with a dollop of dairy-free whipped cream on the side.

Pro tip: If you’re not a fan of strawberries, this recipe also works with pineapple or frozen banana slices.

Vegan Marinara Sauce

Kardashian loves to pair this simple marinara sauce with vegan eggplant Parmesan. The recipe, developed by Cunningham, is slightly sweet and savory thanks to ingredients such as vegetable stock, whole tomatoes and crushed tomatoes, basil, and more.

This sauce is also great if you’re whipping up pasta or homemade pizza.

Plant-Based Eggplant Parmesan

Speaking of eggplant Parmesan, this vegan dish is made with the aforementioned tomato sauce, chickpea flour, Just egg, vegan cheese, and more.

Poosh points out that this vegan meal, which is also gluten-free, can be “a filling lunch or dinner option.”

Dragonfruit Smoothie Bowl

Though this fruit-filled dish is good at any point in the day, Kardashian prefers to eat it for breakfast to start her day off on a nutritious note.The colorful smoothie bowl features a frozen dragonfruit and plant milk base along with cinnamon syrup pears. Toppings include sliced grapes, gluten-free granola, and toasted coconut chips.

“This recipe is super flexible and any toppings can be added, including various fresh fruits, nuts, chia seeds, hemp seeds, and cacao nibs. Since Kim loves anything cinnamon sugar, I added cinnamon pears to this bowl,” Cunningham explained to Poosh. “The pears are really versatile and can be used as toppings for other vegan breakfasts and snacks, like overnight oats, chia pudding, french toast, and banana pancakes. They can keep in the fridge for several days.”

This version has a cherry and açai base with Kim-approved toppings like shredded coconut and chia seeds.
