Since going vegan in 2020, singer Lizzo has shared dozens of her favorite plant-based recipes on social media. The Grammy winner is particularly fond of using TikTok, which has made dishes like dalgona coffee and pesto pasta go viral. 

While those recipes (and others) aren’t inherently vegan, Lizzo’s versions are always plant-based. For example, when she made herself a plate of feta pasta in February, she replaced the recipe’s titular feta cheese with vegan goat cheese. Not surprisingly, the final product was pretty darn delicious.

When Lizzo isn’t sharing full vegan recipes, she’s cluing other flexitarians and vegans into some of her go-to meat-free foods via her wildly popular “What I Eat in a Day” TikToks. Some of her favorites include breakfast smoothies, oat milk yogurt, zucchini noodles with marinara sauce, and dairy-free ice cream. 

And this isn’t the first time Lizzo has experimented with veganism. In a 2017 interview with NastyGal, the “Juice” singer revealed that she was previously vegetarian for seven years and vegan for one year. 

At the time, Lizzo explained she was motivated to ditch meat while living in Minneapolis because of the city’s impressive vegan and vegetarian food scene. “Minneapolis has really, really real good vegetarian and vegan food options,” she told the outlet. “I really discovered my vegetarianism and my veganism there. I found places that were really creative with how they made vegan food and it wasn’t just fluff, just tofu, just seitan. It was, like, finding ways to make vegetable-based proteins”

Lizzo embraces a vegan diet for her health

The “Truth Hurts” songstress dubbed herself a “new vegan,” in a TikTok video shared in June 2020 and shared one of her first “What I Eat in a Day” videos. “This is not every day, but this is a pretty average one,” she explained at the time.

In the caption for the clip, the musician noted that she’s getting used to a plant-based eating regimen. “As a new vegan I’m enjoying exploring flavors from plants & plant based proteins!” she wrote. “Every journey is personal & deserves to be celebrated.”

Weeks later, Lizzo switched up her diet and experimented with raw vegan eats. “I’ve been raw vegan for the last four days and I wanted to show you what I had yesterday because it was so delicious,” she said. Her go-to raw vegan eats included an apple and beet salad, smoothies, and more.

“Being raw has a lot of internal benefits,” Lizzo later said on her Instagram Stories. “Those [internal benefits] are the ones that are important to me. “Being raw] boosts your immune system [and] it gives your digestive system a break. And it just boosts your energy.”

Research indicates that Lizzo is right on the money. Numerous studies have shown that a diet packed with fruits and veggies can be beneficial for digestion and help lower blood pressure, as well as lowering your risk of cardiovascular disease.

Lizzo doesn’t hold back when it comes to sharing her vegan faves with her millions of followers. She’s particularly fond of sharing recipes for popular comfort foods like nachos and mac and cheese, and also loves to post vegan versions of trendy TikTok dishes. In May 2021, Lizzo was feeling a tad under the weather, so she whipped up something she dubbed “Sick Day Soup.” The comforting dish is made with “green veggies” such as kale and spinach, as well as sweet potatoes, garlic, and ginger.

Lizzo tosses all of the ingredients in a blender to create a puree and then tops the finished hearty product with spicy kale chips, black pepper, turmeric, and sesame oil. “It was actually really delicious and most importantly it made my body feel better,” she declared after giving the soup a taste.

Pesto pasta with vegan bacon

After spotting many pesto pasta recipes on TikTok, Lizzo decided to make her own vegan version of the dish in May 2021 despite not being a pesto fan because it makes her stomach hurt. Still, she made the trendy meal using a vegetable-packed pesto that includes blanched greens, nutritional yeast, and garlic.

She then prepared vegan bacon on the stove and tossed some noodles into the pan before topping the entire thing with her homemade vegan pesto. “It has some flavor!” she gushed.

Vegan bacon and egg breakfast sandwich

Vegan breakfast? Yes, please! In May 2021, Lizzo whipped up a plant-based breakfast inspired by one of chef Gordon Ramsay’s favorite morning meals. The vegan version is made with sliced sourdough bread, plant-based bacon, caramelized shallots, and scrambled JUST Egg topped with chives and salt.

Carrot dip

Carrot overload! Lizzo found herself with a surplus of carrots in June 2021, so she decided to throw together a vegan feast starring the orange vegetables. The main attraction was a carrot dip made with carrots, onions, spinach, garlic, cinnamon, and other spices, but the singer also cooked carrot dogs and carrot juice.

Vegan mac and cheese

What do you get when you mix chickpea pasta and a plant-based roux? A tasty base for a hearty helping of vegan mac and cheese. Lizzo whipped up this comforting dish in May 2021 and tossed in plenty of vegan cheese for good measure. She also added some seasoning and cracked black pepper to give the dish more flavor, as well as a big dollop of vegan butter for added creaminess.

Brussels sprout nachos

In her continued quest to find stellar vegan versions of popular comfort foods, Lizzo decided to make a platter of Brussels sprout nachos in March 2021. As the meal’s name implies, it’s basically nachos made with Brussels sprouts and walnuts instead of chips and meat. 

For the “meat” Lizzo used walnuts blended with bell peppers, onions, a bunch of spices, and liquid smoke. She then popped the Brussels sprouts in an air fryer with some salt and pepper to craft the “chips,” and blended some cherry tomatoes to make salsa. 

After browning her walnut “meat” on the stove, the Michigan native assembled her nachos and poured some store-bought vegan queso on top to complete the meal. “Nah this was delicious,” she wrote on TikTok.

Lizzo jumped on the “nature’s cereal”—that is, berries served in coconut water—train in March 2021 and made the vegan dish using coconut water instead of dairy milk. She added blueberries, strawberries, and pomegranate seeds to the mix and added some ice cubes to make the dish extra refreshing.

Vegan feta pasta

Remember that feta pasta dish that was all over TikTok in early 2021? Lizzo made a vegan version of the popular meal in February using cherry tomatoes, vegan goat cheese, fresh basil and salt and pepper over chickpea pasta. The “Good As Hell” singer also added her own touches in the form of chili flakes and vegan honey.

Collard green and vegan turkey wraps

Tasty vegan snacks aren’t always easy to come by, so Lizzo created her own in February 2021. Her nosh of choice? A collard green wrap stuffed with vegan cream cheese, pickles, vegan turkey slices, and hummus. She even tops the whole thing with salt, pepper, and oil for some added flavor.

When Lizzo had a craving for pizza in February 2021, she went ahead and made herself a tasty vegan pie. The plant-based crust was topped with vegan chicken, plenty of arugula, and non-dairy cheese.
