Lemon Roasted Cauliflower With Balsamic Vinegar
This lemon roasted cauliflower dish is the most delicious way to eat cauliflower—second only to cauliflower wings, of course!
I can’t possibly pretend that this is a better way to eat cauliflower than cauli-wings, because obviously cauli-wings are LIFE! But, this oven-roasted cauliflower is perfect as a side dish or as a starting point for a hearty meal. Regardless of how you choose to eat it—this recipe is definitely the one you should make!

Ingredients
- 1 medium head cauliflower
- 2 tbsp oil
- 1 tbsp nutritional yeast
- 1 tbsp lemon zest
- 1 tsp maple syrup
- 1 tsp balsamic vinegar
- 1 1/2 tsp garlic powder
- 1 tsp onion powder
- 1/2 to 3/4 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat oven to 450F. Brush a large (or two medium) baking sheet(s) with oil. Or use parchment paper, but you do not get as much roasting action.
- Combine the remaining ingredients. It will look like a paste, that’s normal.
- Cut the cauliflower into bite size pieces to medium pieces.
- Add the chopped cauliflower to the bowl, and mix with your hands, making sure the cauliflower is well coated with the paste.
- Place the coated cauliflower pieces on the prepared baking sheet, flat side down to get a lot of roasting/browning.
- Bake for a total of 18 minutes or less. Flip the cauliflower after 13 minutes.
- Serve immediately. Store in the refrigerator for up to five days.
