Luxury Hotel Chain Launches Menu With 25 Delicious Vegan Dishes

This week, the Four Seasons Resort Punta Mita announced a very exciting culinary partnership. The five-star luxury resort will be going into business with Leslie Durso, a popular vegan chef. The resort, in Mexico, will work with the chef to start offering a wider range of healthy, plant-based options on their menu.

The resort will now offer an additional 25 dishes all designed by Durso. Punta Mita want to concentrate on healthy food that is made from fresh, local ingredients and the new options will appear at three of the resort’s restaurants.

General Manager at the Four Seasons destination, John O’Sullivan has saidThrough our partnership with the talented Leslie Durso we are setting a new standard in healthy resort dining with elevated vegan offerings across our entire restaurant portfolio…Working alongside our team of chefs, Durso has created plant-based dishes that are both nourishing and delicious, infused with flavors and ingredients authentic to the paradise destination of Punta Mita.’

The three dining locations in the resort have very different themes and as such you’ll now be able to find a plant-based dish to suit almost any taste. The new dishes will include green coconut milk curry, crispy tofu and sun-dried tomato sushi rolls, tofu tacos, portobello aside fajitas and even a plant-based eggplant cannelloni.

Durso is excited to be working with the resort and hopes that she can ‘hono[r] Mexican culture’ whilst still bringing the cuisine ‘into the plant-based world.’

I wanted to ensure the recipes would seamlessly align with the resort’s current offerings at each restaurant,’ says Durso, ‘[I] worked closely with the wonderful team of chefs to create dishes that are tasty, healthy and familiar.’

The resort also offers a wellness and fitness programme, that is tailored to you like no other. Using your genetic makeup to plan your classes, the programme offers exciting and innovative exercise regimes that include Anti-Gravity Fitness and Aerial Yoga.
