These easy no-bake vegan cheesecake tarts are a perfect, and, much healthier alternative to traditional cheesecakes. Chock full of protein and topped with apples, pecans & cinnamon, you definitely won’t feel guilty going in for a second helping.

Protein Packed No-Bake Vegan Cheesecake Tarts


INGREDIENTS

For the crust

-1/4c almonds
-1/4c pecans
-1/2c vegan protein powder (vanilla flavour – try Genuine Health )
-1tsp vanilla
-3 chopped Medjool dates
-3 tbsp maple syrup
-2 tbsp almond butter

For the vanilla icing
-1/2c soaked raw cashews
-3 tbsp water
-1tbsp lemon juice
-3tbsp maple syrup
-1tsp vanilla
-1/3c coconut oil

METHOD

For the crust
1. Combine almonds & pecans in a mini food processor and pulse until you get small pieces
2. Add remaining ingredients and pulse until it starts binding together
3. Press into tart molds and set aside

For the icing
1. Combine all icing ingredients except coconut oil in a high speed blender and blend until smooth
2. Add the coconut oil and blend well
3. Pour over the crust and set in fridge for about 30-60min (I set them in a freezer for 30min as it’s faster)
4. Top with sliced apples, cinnamon & chopped pecans
