My all time favourite food on the go, and a quick fix to having an all-in-one meal. Is it possible to have a healthy burger though? Hint: 100%, yes! And nope, it doesn’t have to be made from beans.
Roasted Red Beet Vegan Burgers with Creamy Harissa Mayo
2 1/2 cups of red beets diced
1 cup of cashews soaked for 2 hours
1 cup cooked brown rice
1 leek sliced thin – white parts only
1 teaspoon dried oregano
1 clove garlic, minced
2 1/2 tablespoons of chickpea flour
1/4 teaspoon chili powder
1/2 teaspoon smoked paprika
dash of liquid smoke
1 teaspoon of vegan Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large pitted medjool date
2 tablespoons of Harissa paste
1 cup of Just Mayo or other vegan mayonnaise
1 tablespoon of maple syrup
2 tablespoons of dill pickle relish
Pre-heat the oven to 400 degrees F. Place the diced beets onto a non stick baking sheet, and toss with olive oil, salt and pepper. Cook the beets for approximately 30 to 40 minutes. Do not overcook as the beets will beet get to mushy.
While beets are cooking, pre-heat saute pan over medium high heat and add 1 tablespoon of olive oil. Add the leeks, and garlic and turn the heat down to medium. Cook the leeks, and garlic for about 5 to 7 minutes until they are translucent, making sure not to brown the garlic.
Remove cook beets from the oven, and cool for about 10 to 15 minutes.
In a food processor, add the cooled beets, cashews, brown rice, cooked leeks, garlic, oregano, chickpea flour, Worcestershire sauce, chopped dates, chili powder, paprika, liquid smoke, salt and pepper. Process ingredients for about 20 seconds until well incorporated. Do not over process, you want the ingredients to have a coarse consistency.
Form the mixture into patties, you will get about 4 to 6 depending on how big you make them. Place patties on a baking sheet lined with parchment paper. Place baking sheet in the refrigerator for 30 minutes, this will make it easier for you to handle them when cooking.
Heat a frying pan over medium high heat, and add 2 tablespoons of olive oil. Place burgers in frying pan and sear each side of the patty for 3 minutes on each side.
Remove burgers from the frying pan, and place on the baking sheet. Bake the burgers in a 400 degree oven for 20 to 25 minutes until the burgers are firm but moist in the middle.
Serve burgers on your favorite burger bun with lettuce, tomato and red onions. Top with the Creamy Harissa Mayo (recipe instructions below)
Creamy Harissa Mayo:
Add all ingredients into a mixing bowl, and mix until well.
