It’s been a crazy, hectic year—to say the least. But that doesn’t mean you can’t make this holiday season one to remember. These roasted potatoes make the perfect vegan side this Thanksgiving. The savory dish is the perfect accompaniment for your holiday spread.
Simple, Delicious Roasted Potatoes
- 300 grams baby potatoes, washed and halved
- 2 tablespoons olive oil
- 2 sprigs fresh rosemary (or 2 teaspoons dried rosemary)
- 2 sprigs of thyme (or 2 teaspoons dried thyme)
- A sprinkle of salt
- 1/4 teaspoon black pepper
- 1 teaspoon smoked paprika
Preheat your oven to 375 °F and line a baking tray.
In a small saucepan heat the olive oil and add the fresh rosemary, thyme, salt, and pepper. Once the herbs start bubbling away, cook for a further minute, then remove from the heat.
Place the washed and halved potatoes into a mixing bowl, run the warm oil through a sieve, and drizzle over the potatoes. Toss to coat and place them in the oven for 30-40 minutes or until golden and crispy, flip them halfway through. Keep the herbs aside for later.
Once done, remove the potatoes from the oven, add the herbs back in, and season with salt and pepper before serving.
