Simple, Delicious Roasted Potatoes for Thanksgiving

Simple, Delicious Roasted Potatoes for Thanksgiving
Ingredients:
300g small potatoes washed & cut in halves
2 tbsp olive oil
2 sprigs of fresh rosemary (or 2 tsp dried rosemary)
2 sprigs of thyme (or 2 tsp dried thyme)
A sprinkle of salt
¼ tsp black pepper
1 tsp smoked paprika powder
Preparation:
- Pre-heat your oven to 190C (375F) and line a baking tray.
- In a small saucepan heat the olive oil and add the fresh rosemary, thyme, salt, and pepper. Once the herbs start bubbling away, cook for a further minute, then remove from the heat.
- Place the washed and halved potatoes into a mixing bowl, run the warm oil through a sieve, and drizzle over the potatoes. Toss to coat and place them in the oven for 30-40 minutes or until golden and crispy, flip them halfway through. Keep the herbs aside for later.
- Once done, remove the potatoes from the oven, add the herbs back in, and season with salt and pepper before serving.
