Remember those weekend mornings, when time seemed to stretch out into infinity and beyond? You could just plonk down in front of the television on your elbows and watch the best of Saturday morning cartoons, devouring a fresh-out-of-the-toaster-oven Pop-Tart, no plate needed.
If you’re now a full-grown adult who’s vegan, vegetarian or dairy-free, you’re probably finding it hard to replicate those special Pop-Tarts moments … but you’re still craving the perfectly crisp bite and the warm icing melting in your mouth.
It’s our vegan Pop-Tarts dupe to the rescue! Stuffed with a sweet and tart filling and dripping in delicious icing, these toaster pastries are fresh out of the oven and made to share. This recipe whips up enough snacks for the whole family—plus a lucky friend or two. Bonus: use whatever berries you have on hand, because this recipe is flexible (after all, none of us feel like hitting the grocery store in our pajamas this weekend).
Vegan Berry Pop-Tarts Dupe
- 1½ cups frozen berries (we used a combination of strawberries and raspberries)
- 1/4 cup white sugar
- 1 tablespoon water
- 1 tablespoon cornstarch
- 2½ to 3 cups plain flour, as needed
- ½ cup white sugar
- 1 teaspoon salt
- 1½ cups vegan butter
- ⅓ cup chilled water
- 1 cup powdered sugar
- ½ teaspoon vanilla extract
- 1 drop pink food coloring
- 1 tablespoon aquafaba (the liquid from canned chickpeas)
- freeze-dried strawberries, optional
Add the frozen berries and one-quarter cup white sugar to a small saucepan and bring to a boil while stirring.
Mix together one tablespoon of water and cornstarch to form a slurry before adding It to the berry mixture.
Continue to mix well until the filling thickens. Turn off the heat and set aside.
In a food processor, combine 2½ cups of plain flour, white sugar, salt and vegan butter and process until it resembles bread crumbs. Add a little chilled water at a time until a dough is formed. If you add too much, just add a little more flour.
Wrap the dough in cling film and chill until firm.
Preheat the oven to 360°F and line a large baking sheet with baking paper.
Dust a clean surface with plain flour and tip out the dough. Roll it out into a large rough rectangle, about half a centimeter thick.
Cut the rolled-out dough into 12 evenly-sized rectangles (approximately five inches by three inches).
Gently place 6 of the rectangles on a lined baking sheet and spread one tablespoon of the filling onto each one, leaving a one-centimeter gap around the edge. Add a little more filling if necessary.
Place the remaining rectangles on top of the filled ones, gently pressing around the edge and then pressing down with a fork to seal.
Using a sharp knife, gently poke some holes in the top of each Pop-Tart and spray with canola or vegetable oil.
Place the tray in the oven and bake for 30 to 40 minutes, until golden. Once cooked, remove from the oven and gently place the toaster pastries on a baking tray to cool.
While the Pop-Tarts are cooling, make the icing by mixing together the icing sugar, vanilla extract, food coloring and aquafaba.
Gently spread over the top of each toaster pastry before crumbling some freeze-dried strawberries on top. Allow to set for 10 minutes before serving.
