Vegan Mac and Cheese and Pulled ‘Pork’ in a Waffle Sandwich

This vegan mac and cheese waffle slider is stuffed with Pulled Oumph! plant-based protein and fresh veggies.

Vegan mac and cheese never looked more delicious than it does in this waffle slider. The dairy-free mac and cheese sandwich features pulled pork by plant-based meat brand Oumph!, and vegan slaw.

Vegan Mac and Cheese and Pulled ‘Pork’ in a Waffle Sandwich

Ingredients:

Vegan Slaw:

2 tablespoons apple cider vinegar
1 teaspoon cane sugar
½ teaspoon celery seed powder
½ cup julienned red peppers
¼ cup chopped cilantro
3 cups red cabbage
1 cup julienned carrots
Salt & pepper to taste

Waffle: 

1 box vegan mac and cheese
⅔ cup flour
1 teaspoon onion powder
¼ minced parsley
2 tablespoons minced chives
1 cup shredded vegan cheddar cheese

Pulled pork:

1½ cups Pulled Oumph!  
1 tablespoon olive oil

Preparation:

  1. For the Slaw: In a medium bowl, whisk the apple cider vinegar, sugar, and celery seed powder. Add the red pepper, cabbage, cilantro, and carrots. Add salt and pepper to taste if desired. Mix well. 
  2. For the Waffle: Make the vegan mac and cheese according to package instructions.  Pour into a bowl and mix with flour, onion powder, minced parsley, minced chives, and shredded vegan cheddar cheese.  Grease the waffle iron well and add enough batter to cover the entire waffle iron. Cook for six to seven minutes. Once cooked, carefully remove from hot iron.
  3. For the Pulled Oumph!: Heat a pan to medium heat. Add olive oil. Cook Pulled Oumph! according to package instructions.
  4. To build: Place one waffle square down followed by the Pulled Oumph! Top with slaw followed with another waffle square.
