Three top luxury hotels based in the destination cities London, New York, and Beverly Hills, are offering vegan menus — and these aren’t just your side salads and yam fries. These menus feature a various assortment of fresh, local produce and ingredients that shine in innovative dishes.
Shaun Rankin, a Michelin-star chef at London’s Flemings Mayfair Hotel has an affinity for how versatile vegetables are. Vegetables take center plate as Rankin highlights them in experimental dishes like Green Asparagus with Truffle, Wild Mushrooms, and Artichoke (£14); Beetroot Radish with Kalamata Sorbet and White Balsamic (£8); and Coconut Panna Cotta with Vanilla, Mango, and Mint (£9).
