Your vegan meals just got a bit… fancier.
On this episode of EATKINDLY With Me, Nathan Josias—a French plant-based chef residing in London—cracks the code for the perfect vegan Scotch egg.
Scotch eggs are traditionally a boiled egg wrapped in sausage, usually pork. The egg and sausage are coated in breadcrumbs and either baked or deep-fried. In his version, Josias omits the egg and animal-based sausage, instead using potatoes and vegan sausage to create this mouthwatering dish.
Josias uses agar agar—a gelatin-like substance derived from red algae—and cashew milk to create an egg white mixture. For a taste reminiscent of the original version, Josias uses Kala Namak, or Himalayan black salt to achieve an “eggy” taste.
And for the egg yolk, Josias uses potatoes. “Normally potatoes are not in the Scotch egg recipe,” Josias explains. “But we’re going to use them to make the yolk.”
In order to achieve the egg shape, Josias uses an egg-shaped mold. To get a yellow look similar to a hen-derived egg yolk, he seasons the potatoes with turmeric. And don’t forget about the vegan meat! Josias uses Beyond Meat sausage for his vegan Scotch eggs.
Vegan Scotch Egg
- 400ml frying oil
- 1 bowl panko bread crumbs
- 400ml cashew milk
- 5g agar agar
- 2 tsp black salt
- 3 boiled potatoes
- 1 tsp turmeric
- Vegan sausage
For the egg: Peel and cut the potatoes and place them in a pot of water to boil for 20 minutes.
In a pot, whisk the cashew milk, agar agar, and black salt. Stir for about five minutes and bring to a boil.
Place the mixture into the egg-shaped mold. Let it cool in the refrigerator for 40 minutes.
When the potatoes are finished boiling, drain them. Mash the potatoes with a fork. Add the turmeric and salt and pepper to taste.
In a bowl, mash the vegan sausage and add herbs to taste.
Remove the eggs from the refrigerator, taking them out of the mold. Use a teaspoon to scoop out the center of the egg white.
Place the vegan egg yolk mixture into the egg white center.
Place two egg halves together to form one egg. Wrap them in the vegan sausage.
Roll the vegan Scotch eggs in the Panko breadcrumbs.
Deep fry the vegan eggs in oil until golden brown. Enjoy!
