In this episode of EATKINDLY With Me, Amanda Castillo shows us how to veganize five, delicious-looking viral TikTok recipes that even Lizzo will want to try. These include dalgona coffee, mini pancake cereal, banana bread, a one-pan “egg” sandwich, and hot chocolate bombs.

“I’ve become an avid TikTok user this past year,” she says. “And the recipe trends are where it’s at.”

Dalgona Coffee

Amanda explains that dalgona coffee is typically made in a stand mixer. “I feel like that’s just a lot of washing for one cup of coffee. My hack to make this a lot faster is to have one of these bad boys,” she says, holding up a milk frother.

  • 2 tablespoons instant coffee
  • 2 tablespoons granulated sugar
  • 2 tablespoons boiling water
  • 1 1/2 cups plant milk

Preparation

  1. 1
    Add the coffee, sugar, and boiling water in a cup (if using a frother) or a bowl (if using a hand mixer or stand mixer).

    Whip the mixture for 2-3 minutes until you reach your desired consistency.

    For iced coffee, add a few ice cubes to a cup, add milk, and then top with the whipped coffee. For hot coffee, add hot milk to a mug and then top with the whipped coffee.

“I think this went crazy like in April of 2020,” Amanda explains. “And it was invented by this girl named Sydney Melhoff.” The secret to making these mini pancake pieces is to disburse the pancake batter using a piping bag. “Just know that making this is very, very time-consuming,” she says.

Ingredients

  • 1 cup all-purpose flour (substitute brown rice flour to make it gluten-free) 
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup plant milk
  • 2 tablespoons agave or maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla

Preparation

  1. 1
    Combine flour, baking powder, and salt in a large-sized bowl.

    In a separate bowl, whisk plant milk, sweetener of choice, apple cider vinegar, and vanilla.

    Pour the liquid mixture into the dry mixture and mix until smooth.

    Let rest for 5 minutes. Your batter should be bubbling!

    Pour batter into a piping bag, Ziploc bag, or squeezable bottle.

    Heat a nonstick pan over medium to medium-low heat. Lightly grease with butter or cooking spray.

    Once heated, squeeze small dots of batter onto the pan. Let cook for 1-2 minutes and then flip with a spatula (chopsticks can be used as well). Cook for another 1-2 minutes.

“I think the person that was behind this recipe is a TikTok account called Cooking With Shereen,” Amanda explains. “She shared her banana bread recipe on TikTok and it got over 21 million views, four million likes.” The secret to whipping up this banana bread recipe sans egg? Aquafaba. “This is probably the best banana bread I have ever made. So flavorful, moist, like are you kidding me? Wow,” she says after digging into her first bite.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted vegan butter (I used Earth Balance)
  • 1 cup light brown sugar
  • 5 tablespoons aquafaba (liquid leftover from cooked chickpeas)
  • 2 cups ripe bananas (about 3-4 medium)
  • 1 teaspoon pure vanilla extract

Preparation

    Preheat oven to 350​ degrees Fahrenheit.

    Spray 9 by 5-inch loaf pan. Set aside.
  3. 3
    In a large bowl, sift flour and baking soda. Add salt and whisk to combine.

    In a stand mixer with a paddle attachment, cream butter and brown sugar over medium speed until combined. Add aquafaba and combine.

    Mash bananas in a separate bowl and add into the stand mixer bowl. Add vanilla and continue mixing on medium-high speed until combined.

    Add the dry ingredients in 3-4 batches, slowly mixing until combined and scraping down the sides as needed.

    Pour the mixture into the prepared loaf pan and bake for 50-60 minutes.

    When inserted with a toothpick and it comes out clean, remove from oven and let cool for 1-2 hours.

One-Pan “Egg” Sandwich

Up next: one-pan “egg” sandwich. For her egg substitute, Amanda uses JUST Egg. And for the cheese, she opts for Violife cheddar slices and for bread, Dave’s Killer Bread. “Let’s give this a bite shall we? Wow, I’ve outdone myself again,” she says. “One-thousand percent I would make this again.”

Ingredients

  • 4 ounces JUST Egg
  • 2 bread slices (I used Dave’s Killer bread
  • 1 teaspoon vegan butter
  • 2 slices of vegan cheddar cheese (I used Violife Cheddar Cheese)
  • Salt and pepper to taste
  • 1 tablespoon chives, chopped
  • Fillings: Spinach, vegan deli slices, or vegan bacon (optional)

Preparation

  1. 1
    Heat a medium-sized pan over medium heat and add 1 teaspoon of butter.
  2. 2
    When butter is melted, pour JUST Egg all over the pan’s surface.
  3. 3
    Immediately place 2 pieces of bread onto the “egg” mixture and flip to coat each side.
  4. 4
    Add chopped chives and seasoning, and cook for 2-5 minutes until the underside is lightly golden.

    Flip the entire egg-bread without breaking. Once flipped, add cheese onto each slice and add any other fillings if desired.

    If there is any “egg” hanging over the bread slices, fold the excess onto the bread center.

    Fold one slice of bread over the other and cook for 10 seconds. Flip and cook for 10 seconds.

Hot Chocolate Bombs

Amanda’s last vegan TikTok recipe is a hot chocolate bomb. “This is what I’ve been the most nervous about,” she says. “It’s basically a sphere of chocolate filled with hot cocoa powder, marshmallow, sprinkles sometimes, and you just add it to a glass of warm milk.”

Ingredients

  • 12 ounces high-quality, semi-sweet chocolate (I used Guittard semi-sweet baking chips)
  • 1 cup vegan mini marshmallows
  • 9 tablespoons vegan hot cocoa mix
  • Vegan sprinkles (optional)

Preparation

  1. 1
    If using a chocolate bar, finely chop into small pieces. If using chocolate chips, skip this step.
  2. 2
    Add your chocolate to a bowl and microwave for 30 seconds.
  3. 3
    Remove from the microwave and stir well.
  4. 4
    Heat for 15 seconds and stir again.
  5. 5
    Repeat this process until chocolate is almost melted (not fully melted). Never heat for More than 15 seconds at a time because you don’t want the chocolate to go above 90​ degrees Fahrenheit. Feel free to check the temperature in between microwave intervals to stay safe.

    Make sure your molds are clean and dry before using them.

    Paint a thin layer into the molds and refrigerate for 5 minutes.

    Paint a second coat of chocolate over the first and focus on building up the thickness of the rim. Refrigerate for 5 minutes.

    Take your chocolate half-spheres out of the molds and place them onto a plate in the meantime.

    Flip your mold upside down to use as a stand for your chocolate.

    Fill with 1 1/2 tablespoons of hot cocoa mix and a few marshmallows into each half-sphere.

    Check the temperature of the leftover chocolate in the bowl. If it is hardening and falling below 85 degrees ​​Fahrenheit, microwave for 5 seconds. Stir until melted.Repeat if needed, but do not exceed 90​ degrees ​​Fahrenheit.

    Place your melted chocolate into a piping bag or Ziploc bag.

    Using gloves, pipe melted chocolate around the rim and attach the second half-sphere on top. Press gently to seal.

    If necessary, pipe more chocolate around the outside rim and wipe away the excess with a brush.

    Roll the chocolate sphere in sprinkles to finish the look.
